500 grams Coconut milk, fresh
500 grams Milk
100 grams Sugar
2 grams High Acyl Gellan (LT)
.2 grams Low Acyl Gellan (F)
11 grams Ultratex 3
Bring milk and sugar to a boil. Using a hand blender, mix in both gellans, previously mixed with a small quantity of sugar. Pour into blender and mix well, add coconut milk, mix and strain.
Allow to set, add ultratex and mix again with hand blender before setting in desired service vessel.
You can make a beautiful creamy "fluid gel" with nothing more than milk and gellan, sugar is cool too
As per ease of use, I recommend mixing the gellan with a little bit of sugar to make the medicine go down
Stir your "cream" over medium to high heat
Then whisk in the gellan mix
If you don't have three hands, a friend is useful
The milk will start to coagulate instantly
Check to make sure that the gellan is dispersed
Indeed, it is smooth as silk
I like to add some fresh coconut milk here and shear it in for 1-2 minutes
As you can see here, the "milk" starts to form a skin around the sides of the blender
At this stage, just having slightly cooled, the gellan is ready to set firmly
I quickly pass the base through a fine mesh strainer
After the "fluid gel" sets, I give it another mix with the hand blender to make it "pourable"
And then I can build a dessert on top of it, like so
