Demo: Milk Jammin





700 grams Milk
200 grams Cream
100 grams Sugar
4 grams Low Acyl Gellan (F)
10 grams Ultratex 4

Bring milk, cream and sugar to a boil.
Emulsify gellan with a hand blender.
Transfer to a thermomix and mix for 2 minutes.
Allow to set and then mix in thermomix with ultratex.
Strain and reserve cool.
