700 grams Milk
200 grams Cream
100 grams Sugar
4 grams Low Acyl Gellan (F)
10 grams Ultratex 4
Bring milk, cream and sugar to a boil.
Emulsify gellan with a hand blender.
Transfer to a thermomix and mix for 2 minutes.
Allow to set and then mix in thermomix with ultratex.
Strain and reserve cool.
One of my favorite applications is to "turbo" a fluid gel with a modified tapioca starch, in this case ultratex
Bring your milk and sugar to a boil
Add your gellan or other gelling agent previously mixed with some sugar
After a quick boil I transfer to the bowl of a thermomix and blend for 30 seconds to one minute
As you can see the gellan thickened milk sets right away
Pass the base through a fine mesh sieve
You can see the gel sets very quickly, so you can actually generate a cool "scrambled egg" type look, were you so inclined
I break up the gel with a whisk first
Then I use a hand blender to incorporate the Ultratex, and use an ice bath to keep the friction from raising the temperature and molesting my fluid gel
