DEMO: Raspberry Soda Mousse

Thickening Product: Willpowder Xanthan Gum
Technique: Carbonated mousse
Component: Raspberry soda mousse

850 grams Raspberry puree
150 grams TPT sirop (75 grams Water/75 grams Sugar)
2 grams Xanthan gum

Using the vase of a blender, mix the sirop with the xanthan gum until properly hydrated.  Add the raspberry puree, and strain.  Fill a soda siphon with 850ml of base, and charge with one each soda and cream.  Allow to rest, chilled for 2 to 4 hours.  Serve immediately.
